
Carrageenan
Carrageenan is a hydrocolloid that belongs to a family of water-soluble polysaccharides extracted from certain species of red seaweed. It is an excellent gelling agent that forms transparent thermo-reversible gels with minimal syneresis, melts at high temperatures, and has the ability to gel at room temperature, thus eliminating refrigeration.
